Low Fat Apple Muffins!

These are my low fat Apple muffins! They really get you in the Autumn spirit as they have a slight hint of spice to them, plus its a good use for all the Apples around at this time of year!


The recipe:

-400g Plain Flour
-4 tsp baking powder
-1/2 tsp Salt
-1/2 tsp Cinnamon
-1/2 tsp Mixed Spice
-125g Caster Sugar
-1 Egg
-4 tsp Sunflower oil (or any unflavoured oil)
-350ml Milk (you can use any kind, soy, almond etc)
-2 cooking Apples, peeled, cored and finely chopped

To make:

-Preheat the oven to 200c and like a Muffin tray with paper cases
-Sieve the flour, baking powder, salt, Cinnamon and Mixed spice in to a bowl and then stir in the sugar
-Beat the egg in a jug, add the oil and then whisk until light and fluffy. Then add the milk and whisk again
-Fold the Egg/oil/milk mixture in to the dry mixture. Then add the chopped Apples and combine
-Spoon the mixture in to the paper cases and bake in the oven for 20-25 minutes, until risen and golden on top
-Then enjoy warm!
