Dark Chocolate and Cranberry Cupcakes!

So, I think its time for another chocolaty post! I absolutely love Dark chocolate- anything above 75% Coco solids! I know you usually put White chocolate and cranberries together, but you would be surprised how well this works!



The recipe:

-1 tbsp good quality Coco powder (Green&Blacks is good!)
-100g Self-raising flour
-1/2 tsp Bicarbonate of Soda
-50g Caster Sugar
-100ml Milk
-1 egg
-2 tbsp Sunflower Oil (or any unflavoured oil)
-Few good handfulls of Dried Cranberries 
-Dark Chocolate chunks

To make:

-Preheat the oven to 150c and line a cupcake tray with paper cases
-Sieve the Coco powder and self-raising flour in to a large bowl and add the Bicarb and sugar
-Beat the egg, oil and milk together in a jug. Make a well in the dry ingredients and pour the egg mix in, stir until well combined and then add the dried cranberries and chocolate chunks
-Spoon the mixture in to the cupcake cases and then bake in the oven for about 15 minutes until well risen and a skewer comes out clean
-You can melt some chocolate to drizzle on top, or make some chocolate icing if you wish!
