Lemon Drizzle Muffins!

 These Lemon drizzle muffins are amazing! And to be honest, they're not even that bad for you (apart from a little oil!) They are really lemony and the Lemon icing on top is an extra hit!



The recipe:

-2 Eggs, beaten
-85g/3oz Caster sugar
-240ml Milk (you can use any- soy, almond etc)
-100ml vegetable oil (or any unflavoured oil)
-3 tsp baking powder
-1/2 tsp salt
-4 Lemons, Zest only and the juice of 1
-50g/2oz Icing sugar
-Sprinkles (optional)

To make:

-Preheat the oven to 200c/Gas 6 and line a muffin tray with paper cases
-Mix the Egg, sugar, oil and milk together in a large bowl
-Sift in the flour, baking powder, salt and then add the Lemon zest, then combine all ingredients
-Spoon the mixture in to the cases and bake in the oven for about 20 minutes until well risen and golden. (Make sure to keep an eye on them and cooking time varies on oven type)
-Mix the icing sugar and juice of 1 lemon together to make the icing and drizzle on top. Then finish with a few sprinkles to make them look pretty!
